Day 228 Cooking

If I do say so myself....it's been a pretty successful session in the kitchen today!

Might be time to cut the grass.... 

On the menu for tonight's dinner we have a Greek Lamb & Zucchini Bake served with a Barley & Honey Roast Pumpkin Salad (and some Tofu for me :) 

The best part about these dishes? Eeeeaaasy to make! Easy and YUM.

Ready? Let's GO!

Greek Lamb & Zucchini Bake

What you need:
2 onions
3 garlic cloves
600g lean lamb mince
1 cup Grilled Vegetables Pasta Sauce (Five Brothers brand is delish!)
2 tablespoons chopped fresh oregano leaves (or 1 tablespoon dried oregano which is what I used)
2 zucchini, cut into ribbons
1 cup plain Greek-style yoghurt
1/3 cup grated parmesan cheese


1. Pre-heat oven to 180. Heat oil in frying pan, add onion and garlic and cook until softened. Add mince and cook, stirring until browned.


2. Add pasta sauce and oregano and cook, stirring for 6 - 8 minutes or until thick. 


3. Spoon half the mixture into dish and top with half the zucchini. Repeat with the remaining mince mixture and zucchini. Top with yoghurt, sprinkle with cheese and some dried oregano to finish. Bake for 30 minutes. Done!

Barley & Honey Roast Pumpkin Salad

What you need:
1 cup pearl barley
700g butternut pumpkin, peeled and chopped
1 tablespoon honey
2 teaspoons olive oil
100g baby spinach leaves
120g goat's cheese, crumbled

For the dressing:
1.5 tablespoons olive oil
1 tablespoon white balsamic vinegar (I just used original balsamic vinegar and it was still fantastic)



1. Place Barley and 4 cups cold water in a saucepan over high heat. Bring to the boil, then simmer for 35 minutes or until tender and liquid almost absorbed.  Drain. Rinse under cold water. Drain & transfer to bowl.

2. Preheat oven to 180, place pumpkin into bowl and add honey and oil - toss to combine. Place onto baking tray and roast for 25 - 30 minutes. Set aside to cool.


3. Make dressing - place oil and vinegar in bowl, season with salt and pepper and whisk to combine. Add pumpkin, spinach, cheese and barley - toss to combine.

Man oh man... this is T.A.S.T.Y!


Cheating a bit... but I ran out of time to marinate my own tofu, so I grabbed this ready-to-serve Sesame Tofu to add to the salad for my dinner.

The verdict? 
Lewy says: "Beautiful, definitely make this again"
Jacob says: "Babababa" (Translation: this is the best meal I've ever had)
Sam says: "I'm not hungry".. (just ignore this review.. there is always ONE critic!)

2 out of 3 = Success!!!!


Now to spend the some time zoning out in front of the TV.
